Although the California Roll resembles typical Japanese maki sushi, but it does not contain raw fish. Instead, it's created with crab meat (or crab sticks), avocado, cucumber, and sometimes even cream cheese. That's because this sushi dish developed in California, USA, in the 1970s.
At that time, many people weren't used to enjoying raw fish, so local chefs invented new sushi dishes with ingredients that Americans were more familiar with. The inside-out wrapping, with the seaweed on the inside, also helped reduce issues for people unfamiliar with seaweed's distinct smell and color.
The popularity of the California Roll has since sparked a fusion of several gastronomic traditions, symbolizing cultural exchange and adaptability in the culinary world.
